Whoever thought of putting a vegetable in a cake...THANK YOU! While I highly doubt a zucchini cake or a squash cake would be even slightly as good as carrot cake. There's something about the slight touch of cinnamon with the light cream cheese frosting that says, "this would be really weird if it was broccoli..."
